Ingredients
- 1 packet of rice noodles
- 4 eggs
- red and green capsicum, sliced
- 2 chicken breasts, sliced
- 300 gm prawns
- 2 carrots, peeled and sliced into long matchsticks
- peanut oil
- 3 Tbs soy sauce
- 4 Tbs oyster sauce
- 3 Tbs curry powder
- 1/2 tsp sugar
- 1 T fish sauce
Method
- Place rice noodles in hot, not boiling, water for 10 min to soften
- in hot wok, add 4 Tbs oil and fry chicken until cooked through Take the chicken out
- heat up wok again, add carrots, capsicums, and cook 3-4 min Take the vegetables out
- heat wok again add little oil and fry prawns 2 min, then add cracked eggs and cook until eggs scrambled and prawns pink and firm
- add curry powder, oyster and soy sauce, sugar, fish sauce, then put all cooked ingredients in the wok and mix well. at the end, add noodles and dish ready to serve.
