Ingredients
- 1 cup Sushi rice
- 40ml Sushi seasoning
- 1 cucumber
- 1 avocado
- Pickled ginger for serving
- Mayonnaise for serving
- 4 sheets Yaki Nori
Method
- Wash sushi rice five times with cold water. Drain off water. Add 2 cups of cold water, bring to boil and simmer until almost evaporated. Add sushi seasoning. Let cool.
- Slice avocado and cucumbers into thin strips lengthways.
- Place nori sheet on bamboo mat. Using a wet spatula, spread sushi rice over three quarters of the nori sheet. Place a straight line of avocado and cucumber along the closest edge. Tightly roll bamboo around to form a circular shape. Place roll in middle of bamboo and fold edge of bamboo to outside edge pressing into a square shape.
- Repeat process until all ingredients are used. Refrigerate for 1 hour.
- Slice rolls to desired thickness. Serve with shredded Asian vegetables, pickled ginger and mayonnaise.
