Ingredients
- 1 cup Tempura Batter mix
- 8 medium to large green prawns.
- 1 cup long grain rice
- 1 TBS wasabi paste
- 2 eggs
- oil for frying
- 1/2 tsp salt
- lemon grass for garnish
- dipping sauce
Method
- Peel and de vein prawns. put in fridge to chill.
- Cook long grain rice . Put in lge bowl to cool.
- Beat 2 eggs with wasabi paste and salt. Add to cooled rice.
- Heat oil in shallow pan.
- If you have metal egg rings , place rings in pan. Add 1 heaped spoon of rice mixture into rings and cook until golden, turning once. Makes 8 rice cakes. Set aside , keeping warm.
- Mix tempura flour with cold water . Add prawns to mix and coat thoroughly .
- Cook prawns in oil until golden .
- To serve , place 1 prawn on rice cake , garnish with lemon grass curls. Add your choice of dipping sauce .
