Ingredients
- 2 cups water or chicken broth
- 1 tbsp fish sauce (adjust to taste)
- 1 egg (lightly beaten)
- 100g soft tofu (cubed)
- Chopped onions
- 1/2 tsp white pepper (optional)
- 1 tbsp chopped coriander (plus extra for garnish)
Method
- In a pot, heat 2 cups of water or broth over medium heat. Add fish sauce, chopped onions and white pepper. Bring to a gentle simmer.
- Gently add cubed tofu and simmer for 2 minutes.
- Slowly pour in the beaten egg, stirring gently in one direction to create egg ribbons.
- Add chopped coriander and stir.
- Garnish with extra coriander. Serve hot and enjoy!
