- Cube tofu then Marinate in half a jar of valcom yellow curry paste, set aside. Cook rice with a can of coconut cream, water and a dash of salt. Pre chop vegetables.In a wok, fry onion in oil until just soft, then add other half of valcom yellow curry paste, fry until aromatic. Add can of coconut cream,100ml water, some sugar and bring to boil (just follow instructions on valcom jar.)Add pre-chopped vegetables to work, add a lid and let cook until veggies soft.Take half your marinated tofu, fry in a separate pan until golden, add to curry. Take other half of marinated tofu, coat with flour, then egg, then breadcrumbs. Deep fry until golden. Serve curry with coconut rice.Serve deep fried tofu with Japanese mayo. Garnish with chives, shallot or coriander.
