Ingredients
- Diced sweet potato
- Diced zucchini
- Diced cauliflower
- Diced broccoli
- Diced celery
- 3 hard boiled eggs
- Coriander
- 750mls vegetable stock
- One & a half dried noodle cakes
- 250g shredded roast chicken
- I can coconut milk
- 1/2 jar Volcon laksa paste
Method
- Fry up all the vegetables in a little canola oil until brown & soft
- Add the laksa paste
- Add vegetable stock & allow to simmer
- Add the noodles & allow to soften
- Add chicken & stir
- Add the coconut milk & stir briskly but not boil
- Ladle into bowls
- Garnish with sliced boiled egg & a generous amount of coriander
- Enjoy & slurp it up!
