Ingredients
- 1/2 tbsp extra virgin olive oil
- 1 garlic clove minced
- 1/2 tbsp chopped ginger
- 150g chicken breast cut into strips
- 1/2 red capsicum sliced
- 1 small pak choi chopped
- 1 spring onion finely sliced
- 1 teaspoon fish sauce
- 1 teaspoon tamari
- dash of lime juice
- 1/2 red chilli finely slice
- sea salt
- black pepper
- fresh coriander chopped
Method
- Heat oil, add garlic, ginger and chicken strips. Cook until golden.
- Add spring onions, red capsicum and pak choi and stir fry for 2 minutes.
- Add fish sauce, tamari and chilli and cook until vegetables have softened. Season with salt and pepper.
- Squeeze over lime juice and top with coriander.
