Ingredients
- Salmon fillet skin on
- 2.5 cm ginger peeled & grated
- 2 tablespoons soy sauce
- Juice of 1 lime plus 2 slices for cooking
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1 teaspoon mirin
- 2cm stalk of lemon grass
- Coriander
Method
- Place room temperature salmon on 25 cm square of foil - curl up edges to avoid spillage
- Pour soy, mirin, sesame oil, lime juice, sugar & ginger mixture over salmon
- Top with slice of lime & lemon grass
- Wrap foil around the fish & place on baking tray
- Bake in centre of pre heated 150c oven for 5 minutes for just pink -or longer if preferred.
- Plate up either in foil or transfer to plate & garnish with coriander
