Ingredients
- 400g Chicken thighs
- 1 potato
- Half a kumera
- 400ml coconut cream
- Fresh mint and coriander
- Onion
- Red capsicum
- Valcom green curry paste
- 1 tsp Fish sauce
- 1 tbsp katsup manis
- 1tbsp vegetable oil
- 4 Kaffir lime leaves
- Piece of lemon grass
Method
- Fry onion and diced potato in oil. Add Volcom green curry paste. Heat and then add chicken thighs, sweet potato and coconut cream. Slowly heat and add kaffir lime, lemon grass and diced kumera.
- Simmer for 15 mins. Add fish sauce and katsuo mani.
- To finish, add a Capsicum and chopped fresh herbs.Serve with jasmine rice.
