Ingredients
- Valcom Green curry paste
- 1 tin of Coconut cream
- 1 large Crayfish tail (250g)
- 1 small Eggplant
- 1 Zucchini
- 1 Shallots
- 1 Capsicum
- Butter
- Lemon juice
- 1 tablespoon of Honey or sugar
- Long grain rice
- Coriander to garnish
- Chilli to garnish
Method
- Dice the shallot and put into a pot with some butter. Then add 1 heaped tablespoon or more to preference of green curry paste and let simmer for 2 minutes before adding coconut cream. In another pot cook your Rice or noodles.
- Dice all veg and crayfish tail, add the eggplant first to the pot when simmering. Once eggplant is nearly cooked, add other veg and crayfish tail. Once crayfish is cooked turn off and add lemon juice and honey and stir.
- Serve in a bowl with a bed of rice or noodles and top with coriander and chilli to garnish.
