Ingredients
- 1 tuna can
- Small piece of pumpkin
- One avocado
- 1 big Lebanese cucumber
- Edamame beans, 1 small can
- Kewpie mayonnaise
- Obento Yaki Nori seaweed sushi
Method
- Prepare the Pumpkin: Cut the pumpkin into small cubes and place them in either an oven or air fryer.Air fryer: Cook at 180°C for 7 minutes.Oven: Roast at 200°C for 12 minutes until tender and slightly caramelized.
- Prepare the Veggies: While the pumpkin cooks, chop the cucumber and avocado into bite-sized pieces
- Prepare the Tuna & Edamame: Drain the tuna from the can and set aside. Do the same for the edamame, draining the beans from their can or packaging
- Assemble your Fuji roll: Spread a thin layer of mayo onto a sheet of nori. Then, arrange the prepared ingredients—roasted pumpkin cubes, cucumber, avocado, tuna, and edamame—on top. Roll up the nori sheet, and your delicious creation is ready to enjoy!
