- Ginger, capsicum, 2 small Lebanese cucumbers, 2 carrots (peeled), 2 chicken breasts, 250g vermicelli noodles, 60g peanut butter, ¼ cup soy sauce, 2 tbs sesame oil, 2 tbs white vinegar, 2 tsp honey, Thai basil leaves, Yoosh Aloe Vera drink to serve
- Peel and grate ginger. Slice capsicum, cucumbers. Coarsely grate carrots. 2. Slice the chicken breasts horizontally into 4 equal fillets. Put half the ginger, soy sauce and oil in a shallow dish and stir to combine. Add the chicken and turn to coat. 3. Soak noodles in a large bowl or cast iron pot and cover with boiling water. Soak for 5 minutes until soft. Drain well. 4. Pick the basil leaves from stems.5. Heat a chargrill pan or plate over medium-high heat until hot. Put the peanut butter, remaining vinegar, 2 tbs soy sauce, 2 tbs white vinegar and 2 tsp honey in a small jug and whisk to combine.6. Grill chicken for 3 minutes each side or until golden. Remove from grill and rest for 3 minutes, then thinly slice.7. Combine and serve by adding the capsicum, cucumber, carrot, chicken and basil to the noodles, drizzle with the peanut sauce and toss to coat. Divide the noodle salad among bowls and pour Yoosh aloe vera drink to serve.
