Ingredients
- 1/2 cup cooked sushi rice
- 3 tbsp Obento sushi seasoning
- 1 cup of chopped green veg (eg. sprouts, zucchini)
- handful of chopped cucumber
- half a ripe avocado
- 1 tbsp olive oil
- handful of chopped spring onion
- 2 tbsp Kewpie Mayo
Method
- Heat up oil in a small pan and fry chopped green veg for approx 15 mins (until charred a little bit for flavour). This is a good way to use up green veg that’s been sitting in the fridge.
- While cooking veg, gently mix Obento sushi seasoning with cooked sushi rice.
- Prepare chopped cucumber and avocado on to plate. Then add rice and mixed veg.
- Place spring onion on top for garnishing, followed by the Kewpie Mayo. Serve and enjoy!
