Ingredients
- 500g diced chicken thighs
- 1 brown onion, diced
- 2 garlic cloves, diced
- 2 carrots, chopped
- 1 zucchini, diced
- 2 Tablespoons vegetable oil
- 1/2 cup boiling water
- 1 box S & B Medium Hot Golden Curry Mix
- Steamed rice to serve
Method
- Stir fry onion and garlic with oil in a wok until transparent.
- Add chicken to wok and stir fry until chicken is nearly cooked.
- Add carrot to wok and cook until tender. Then add zucchini and stir fry until cooked.
- Break up the curry mix into a bowl or jug. Add the boiling water and stir until a smooth sauce. Add the sauce to the ingredients in the wok and stir until combined.
- Serve curry over steamed rice and enjoy!
