- 1/2 jar of the Thai curry sauce. 1 can of coconut sauce half a carrothalf a capsicumhalf a zucchiniThree or four small pieces of broccoliOne small radishSome spinach handful of gojiberriesone packet of pad Thai noodlesTofu
Method
- One tablespoon of coconut oil heated add the coconut curry paste, slightly simmer. Add the can of coconut milk. Add all vegetables and tofu. stir slowly. Add in the noodles. bring to the boil, then serve. With fresh. spinach, radish, and capsicum. and gojiberries.
