- This golden bowl of comfort food is perfect to share with vegetarian/vegan friends and family.Method:1. Heat coconut oil in a wok, add onions and garlic, then fry until golden. Add curry paste to release the flavors.2. Add the diced sweet potatoes, potatoes, vegetable stock. Bring to boil then simmer until soft (around 1 hour).3. Add coconut cream, soy sauce (salt alternative) and zucchinis. Simmer for approximately 20 minutes to allow the aromatic spice flavors to infiltrate the dish.4. Serve with steamed rice and freshly chopped basil, coriander, mint leaves and a slice of lime for a refreshing "zing". Enjoy!
