- 1 kg approx 8 chicken drumsticksor any cut of chicken prefered is fine, i love drumsticks(feeds two-four).Rice of choice, i used mixed rice(brown and white mixed).Pandaroo or tcc coconut cream x1 lrg size.chilli flakes sprinkle to garnish(if dont like chilli corriander or chives is nice also).salt and pepper.valcom or five tastes Thai green curry paste 2 tblspoons.
- 1. Add tcc or pandaroo coconut cream to boiling pot with 2x tablespoons of valcom or five tastes Thai green curry paste, stir and add in chicken drumsticks( or any chicken cut preferred)ensure they are covered in the liquid for even cooking, add some water if not quite enough to cover.2. bring to the boil and put the lid on and simmer for 20 minutes till tender and cooked. Taste and season accordingly with salt and pepper.3. boil rice acordinly.4.serve chicken portions (mum and I had 4x each as small drumsticks)on a bed of rice and pour some of the bolied creamy liquid on top, top with a sprinkle of chilli flakes and enjoy. :):)
