Ingredients
- Onion
- Garlic
- Valcom green curry paste
- Mushrooms
- Peas
- Lentils
- Kale
- Half a bag of frozen veg (winter veg mix)
- Coconut milk
Method
- Fry onion and garlic over medium heat in vegetable oil until soften.
- Add all veggies into the pan and fry off. Once half cooked, add the entire jar of green curry paste and mix in. Cook for 2-3mins or until fragrant.
- Add coconut cream & canned lentils (drained) and mix to combined. Let simmer over low heat for 10mins and serve over rice!
