Ingredients
- 1 teaspoon sesame oil
- 3 tablespoons green curry paste
- Packet of frozen Quorn pieces
- Handful of green beans, trimmed
- Head of broccoli chopped into florets
- Tin of Valcom bamboo shoot slices (drained)
- 400ml tin of coconut milk
- Bean sprouts (optional to serve)
- Lime juice (optional to serve)
- Brown rice (optional to serve)
Method
- Cook brown rice according to instructions.
- Meanwhile, heat a wok or deep frypan over a medium heat. Add sesame oil and curry paste and fry until fragrant.
- Stir in quorn pieces so they are coated and begin to defrost
- Add coconut milk, half a cup of water, beans, broccoli and bamboo shoot slices
- Stir, cover and simmer for 10-15 mins.
- Serve with the brown rice, lime and bean sprouts, if you like.
