Ingredients
- 4 cups cooked and chilled rice
- 6 eggs lightly beaten
- 1 tin spiced and processed ham dices
- 1 bag fine shredded dryslaw
- 3 stems shallots (finely sliced and separated bottoms and tops)
- 2 cups frozen mixed veggies (peas corn carrot)
- Seasonings - Obento Mirin, Soy sauce, white pepper, garlic and ginger
- Oil
Method
- Heat oil in a wok or large frypan. Add the eggs and scramble. Remove to a bowl.
- Heat additional oil in wok until very hot. Add rice and stirfry until coated and heated through.
- Add ham, frozen veggies, dry slaw and bottoms of the spring onions. Continue to stir fry until the veggies are cooked and hot.
- Add egg to rice and mix through. Add seasonings. Start with garlic and ginger. Measure with your heart.
- Add mirin for sweetness and soy for saltiness and pepper for gentle warmth. Measure with your heart.
- Finish with tops of spring onions and serve. Add more mirin or soy if desired.
