Ingredients
- Green curry paste
- Avocado oil 1 tablespoon
- 500g chicken breast sliced
- 1 Onion sliced
- Can coconut cream
- Baby corn can
- Bamboo can
- Water chestnut can
- Broccoli head chopped
- Jasmine rice
- Kaffir lime leaves
Method
- Slice onion and chicken and saute in oil until browned
- Add curry paste and stir to release flavor
- Add coconut cream and canned veggies plus 1 cup water.
- Reduce heat and simmer. Add kaffir like leaves (optional) for extra flavour
- Simmer on low for 30 mins, serve with steamed jasmine rice and chopped chilli, coriander or lime wedges if preferred
