Ingredients
- 150g King prawns
- Sriracha mayonnaise
- 1/2 small can corn
- 2 tablespoons lime juice
- 1/4 Avocado
- 1/4 small red onion
- 2x small corn tortilla
- Paprika
- 1/2 cup cherry tomatoes
- Jalapeno
- Olive oil
Method
- In a bowl, mash avocado and combine with corn, chopped onion, tomatoes, jalapeno and lime juice. Season with salt & pepper
- Coat prawns with paprika, salt & pepper. Cook in fry pan on medium heat with some olive oil. 2 mins on each side.
- Heat tortillas. Top with avocado mix, place prawns on top and drizzle with sriracha mayo! Quick, easy, healthy & delicious! Enjoy! 🤤
