- 200g Firm Tofu, sliced into small cubes1 Carrot, sliced finely½ red capsicum, cut into small cubes 6-8 small florets cauliflower6-8 small florets broccoli ½ zucchini, sliced 1 can coconut milk1 jar Thai Red Curry Paste½ tsp sugar½ tsp fish sauce 2 tbsp oil Rice
- Prepare all vegetables and tofu. Add ½ jar Thai red curry paste and oil to frying pan. Fry on low heat until fragrant (approx 2 minutes). Add ½ can coconut cream and simmer for 5 minutes. Add carrots, broccoli and cauliflower, along with the remainder of the coconut cream, fish sauce and sugar. Simmer gently for 6-8 minutes. Add red capsicum, zucchini and tofu, and continue to simmer for 5 minutes. Serve with coconut rice. (Steam rice then mix with coconut cream).
