Ingredients
- Hot Spice Level S&B Golden Curry (1 packet)
- 2 Diced Onions
- 250g Chopped Carrots
- 400g Chopped Potatoes
- 600mp Water
- 450g Chopped Soft Tofu
- A tablespoon of olive oil
Method
- Heat up the pot and add the tablespoon of olive oil. Cook until hot. Add chopped onions and cook until aromatic.
- Toss in chopped potatoes and carrots and cook for 5 to 10 minutes, occasionally stirring. This will allow veggies to soften.
- In a different pan, or an air fryer, cook the tofu to a slightly crispy level. Let rest once desired crispy level is achieved.
- Add water to the pot of veggies and bring to a boil. Once boiling, set to a low to medium heat to bring down to a simmer. Simmer mixture for 15 to 20 minutes with occasional stirring.
- Crack each section of the S&B Curry packet and add to mixture. Stir until mixed well. Then add in tofu. Stir and combine for 5 minutes.
- Plate up with rice or noodles, and enjoy!
