- Cook rice. While rice is cooking Cook in separate pan- Onion till brown, Then add chickpeas, then Spices- cumin, garlic salt, grinder coriander, curry powder, fresh garlic, garlic paste, smoked paprika, pepper Let chick peas roast in those flavours. Then add 1/4 can of diced tomatoes Simmer for 5-10min and add fresh parsley. When rice is ready add coconut milk, stir and heat again Then add baby spinnach to the chick peas. Put coconut rice on the bottom of your bowl and serve chick pea curry on top.
