- Any vegetables, I used, potatoes, capsicum, zucchini, baby spinach, corriander
- Cut vegetables into cubes, fry potatoes in 1 tbs butter until nearly cooked, add capsicum and zucchini and add 1 tsp garlic, ginger and fresh chilli, 1 tbs curry powder, 1/2 tsp turmeric, 1/2 tsp all spice, pinch of cinnamon & 1/2 tsp cummin, cook for 5 mins. Add 1 tin of TCC coconut milk, when it starts to boil, turn off add 1/2 bunch of chopped coriander and big hand full of baby spinach. Cover and leave for 5minutes. Serve with curd/natural yogurt, pappadam and rice. Can use any veggies for this dish.
