Ingredients
- 3 onions
- 4 cloves garlic
- Tablespoon grated ginger
- 3 carrots
- 2 potatoes
- Tablespoon honey
- Tablespoon soy sauce
- 1 packet Golden curry
- 3 cups of chicken stock
- 3 crumbed chicken thigh fillets
- Rice
Method
- Slice onions, and garlic. Cut carrots and potatoes into large chunks.
- Fry onions, garlic and ginger in oil until softened.
- Add chicken stock, carrots, potatoes, honey and soy sauce. Cook on a medium heat until vegetables are cooked through.
- Add golden curry, dissolving 1 block at a time
- Fry chicken until cooked through.
- Boil 2 cups of rice
- In 4 bowls, place rice, chicken and top with the sauce.
