
Ingredients
- 1 Tablespoon Vegetable Oil
- 1 onion chopped
- 2 medium sized carrots chopped
- 2 tablespoons plain flour
- 3 garlic cloves
- 1.5 teaspoons grated ginger
- 4 cups vegetable stock
- 1 potato cubed
- 1 apple diced
- 2 blocks S&B Golden Curry Japanese Curry Mix
- 1 tablespoon tamari
- 3 tablespoons tomato paste
- 1.5 cups frozen peas
- Salt & pepper
- 500g firm tofu cubed
- Rice
Method
- Make the curry :Heat 1 tablespoon oil then add the onion and carrots stirring until starting to soften.Stir in the flour, garlic and ginger. Saute for about 1 minute.Stir in the vegetable stock, potato, apple, Japanese Curry Mix and tamari.Simmer the curry for about 20 minutes until the vegetables are just tender and the sauce has thickened.
- Heat a tablespoon of oil and fry the tofu cubed while the sauce is simmering.
- Stir the tomato paste and peas into the curry and summer for another minute.Season with salt and pepper.Add in the tofu.
- Cook rice then serve.Spoon Japanese Fried Tofu Curry over the rice and enjoy!
