Ingredients
- Chicken breast fillets
- 50 grams panko crumbs
- 4 tbs cooking oil
- 2 carrots diced
- 1 large potato diced
- 8 cloves of garlic diced
- 1 large onion diced
- 1 packet golden curry
- 2 cups of white rice
- Sesame seeds to garnish
Method
- To crumb chicken first lay in flour then dip in a two egg wash before laying in a bed of panko crumbs.
- Fry chicken in oil for 7 minutes each side
- Meanwhile, dice all the vegetables.
- In a large pan, fry onion in a shallow fry of oil, then adding the garlic.
- Once crispy add the vegetables and fry for 5 minutes
- Lower the temperature to low and add 2 cups chicken broth. Simmer for 15 minutes
- Turn off heat and add one packet of golden curry sauce mix. Simmer for 5 minutes or until dissolved.
- Plate up and enjoy!
