Ingredients
- 1 onion
- Tbsp oil
- 3-4 cups mixed veg
- 1 tin of lentils or chick peas
- 3-4 cups vegan chicken stock
- Cooked Rice
- Golden Curry paste to taste
- 3 potatoes
Method
- Heat the oil and cook onions 4 minutes
- Add all of the veg and stock, there should be enough liquid to cover the veg. Cook for 25 minutes. Add the lentils or chick peas.
- As curry paste and stir to dissolve in the heat for 5 minutes. Add more paste to desired taste!
- Serve with rice
