Ingredients
- 180g boneless beef short ribs
- [Marinade] 1tsp soy sauce
- [Marinade] 1tsp white sugar
- [Marinade] 1tsp minced garlic
- [Marinade] 0.25tsp ground black pepper
- [Dressing] 2tbsp soy sauce
- [Dressing] 1tsp white sugar
- [Dressing] 1tbsp sesame oil
- [Dressing] Salt & pepper
- [Noodles] 150g Dangmyeon sweet potato noodles
- [Vegetables] Half brown onion
- [Vegetables] 2 stems green onions
- [Vegetables] 1 carrot
- [Vegetables] 1/2 red capsicum
- [Vegetables] 1/2 yellow capsicum
- [Vegetables] 1 red chilli
- [Vegetables] 2 cups baby spinach
- Sesame seeds
- Vegetable oil
Method
- [Marinade] Cut beef ribs into thin strips (5mm thick, 1cm wide)
- [Marinade] Put beef into a bowl, mix marinade ingredients together and place in fridge for min 1 hour (up to 24 hours)
- [Dressing] Mix dressing ingredients in a large bowl
- [Noodles] Cook noodles according to packet instructions and place cooked noodles into large bowl with the dressing
- [Vegetables] Heat 2 tablespoons of vegetable oil in a pan over high heat
- [Vegetables] Cook brown onion, white part of green onion, and chopped chilli for 1-2 mins (or until onion has softened), add to large bowl with noddles and dressing
- [Vegetables] Using the same pan, add 1tbsp vegetable oil and cook remaining vegetables for 2-3 minutes (or until spinach has wilted), season with salt and add to large bowl with remaining ingredients
- [Beef] Cook beef in same pan for 2-3 mins and add to large bowl with remaining ingredients
- [Final] Mix everything in the large bowl with 1tbsp sesame seeds
- [Serve] Transfer to serving bowls, sprinkle with extra sesame seeds and chilli, and enjoy!
