Ingredients
- 1 pack of OBAP sweet potato noodles
- 1 cup of sliced mushrooms
- 1 cup of sliced capsicum
- 1 cup of sliced carrot
- 1/3 cup of shelled edamame beans
- half an onion, sliced
- 1 tbsp minced garlic
- 2 tbsp rice wine vinegar
- 2 tbsp maple syrup
- 3 tbsp soy sauce
- 1 tbsp roasted sesame oil
- half a tsp Gochujang (Korean Chili Paste)or more, if you like it spicy
- half a cup of sliced spring onion
- 1 tbsp cooking oil (e.g.: rice bran oil) for frying
Method
- Cook noodles in boiling water for 8 minutes. Drain and set aside.
- Prepare the sauce by mixing the minced garlic, rice wine vinegar, maple syrup, soy sauce, sesame oil and Gochuchang into a small bowl and set aside.
- Add 1 tbsp cooking oil to a frying pan/wok and stir-fry the onion, mushrooms, capsicum, carrot and edamame beans
- Add the sauce and noodles to the fried vegetables and stir over heat for another 2-3 minutes.
- Sprinkle with spring onion.
- This tasty dish can be served hot or cold. Enjoy!
