Ingredients
- 3 medium-sized potatoes
- 2 carrots
- 500g diced kangaroo
- 1 small red onion
- S&B Curry Mix Golden Curry
- 540ml water
- 1 tbsp cooking oil
Method
- Peel and dice the onion, potatoes and carrots.
- Heat cooking oil in a large pot over a medium heat, and add vegetables to stir fry for 5 mins.
- Add water to the pot and bring to the boil. Add diced kangaroo to pot, stir briefly, then reduce heat, cover with a lid and allow to simmer for approx. 15 minutes, or until meat and vegetables are tender.
- Remove from heat, and add S&B Golden Curry to the pot and stir through until the water thickens to a sauce and the curry mix has completely melted.
- Serve immediately with freshly cooked rice.
