Ingredients
- 3 ears of corn.
- 1/2 cup Kewpie Mayo
- 2 Tbl Sriracha
- 1 1/2 Tbls Sugar (your preferred sweetner)
- 250g Mozzarella cheese
- 2 Green onions - thinly sliced white and green parts
- Salt and pepper
Method
- Remove husks and silk from corn. Cut off kernels and place in a bowl.
- Mix mayo, sriracha, sugar, cheese and a pinch each of salt/pepper.
- Place in an oven proof dish. Bake in oven at 160 C for approx 10-15 mins or until cheese has melted throughout and is gooey.
- Place under griller and leave until the top is brown and bubbly.
- Remove and garnish with sliced onions.
- Serve on its own, over baked potato or as a side dish.
