Ingredients
- 1 kg Chicken Thigh
- Canola Oil
- MARINADE3tbls gochujang
- 2tbls brown sugar
- 1tbls light soy sauce
- 1 Tbls Mirin (Only the best brand OBENTO)
- 1tbls finely grated garlic
- 1tsp finely grated ginger
- 1tbls sesame oil
- 1/2tsp white pepper
Method
- Mix marinade ingredients in a large bowl. Add chicken and toss to coat well.
- Spray BBQ we’ll with Canola Oil
- Preheat BBQ on high for 5 mins
- Turn BBQ down to low. Place chicken smooth side down on BBQ grill and cook for 5mins or until chicken is slightly browned. Turn chicken over. Use baking brush to baste marinade over chicken. Cook for a further 5mins or until chicken slightly browned. Turn BBQ to high. Turn chicken over and baste again cooking until skin is caramelised. Repeat other side, baste and cook until skin is caramelised.
- Transfer chicken to serving plate and rest for 5mins. Serve with cucumber ribbons topped with pickled red onion.
