Ingredients
- Half jar Valcom Laksa paste
- 1 tbsp neutral oul
- 200g chicken breast
- 1 onion
- 1 can bamboo shoots
- 1 egg
- 400ml coconut milk
- 1 pack Singapore noodles, ready to eat, or cooked
Method
- In a wide saucepan, fry laksa paste in oil until fragrant
- Add chopped onion and chicken. Stir until onion is softened
- Add coconut milk and 200ml of water
- Add bamboo shoots
- Simmer until chicken is cooked through
- Beat the egg and dribble into the pan, so that it sets in strands.
- Serve over noodles in a deep bowls.
- Now you have a hearty, filling take on traditional laksa. You can add mushrooms, peppers, greens, peas .. your choice.
