Ingredients
- 240grams raw green prawns with tails on
- 500 ml chicken stock broth
- 250 ml water
- 1 tbsp coconut oil
- 2 garlic cloves , minced
- 2 cm of ginger , finely grated
- 1 lemongrass
- Laksa paste
- 400g can coconut milk
- 2 tsp fish sauce
- 100g hokkien noodles
- Fish balls
- Tofu puffs
- Broccoli or veggies of your choice
- Bean sprouts
- Lime
- Crispy fried shallots
- Chilli sauce
- Coriander
- Fresh sliced chili
Method
- * Heat oil in a medium pot over medium heat. Add garlic and ginger, sauté for 20 seconds, then add lemongrass. Cook for 1 minute.
- * Add laksa paste. Turn heat up and cook for 2 minutes, stirring constantly.
- * Add chicken stock, coconut milk, fish sauce and simmer for 5 minutes
- * Add veggies and simmer for another 5mins
- * Add raw prawns simmer for 3 minutes.
- * Add tofu puffs and fish balls. *turn off stove but leave pot on turned off stove for 5 minutes.
- * Prepare noodles per packet directions.* Divide noodles to the bowls and pour over laksa *Garnish
