Ingredients
- Rice noodles
- Tbsp Vegetable oil
- 500g Chicken stir fry strips
- 1 jar Laksa paste
- 400ml coconut milk
- 1.5 cups of water
- Baby corn spears
- Sliced pak choy
Method
- Soak noodles in boiling water, use chopsticks or tongs to stir and separate.
- Heat oil in a deep pan on high heat. Add chicken strips and toss for 5 minutes.
- Add Laksa paste, and stir frequently for 2 minutes.
- Add coconut milk and water and mix well.
- Add baby corn spears and pak choy, and bring to boil, stirring occasionally.
- Rinse noodles and add them to bottom of serving bowls. Top with laksa mix.
- Garnish with chilli flakes, coriander, and a dash of lime juice if desired.
