Ingredients
- 2 Yaki Nori sheets
- 1 cup sushi rice uncooked
- 1 avocado
- 1 mango
- Half a medium cucumber
- 1 tablespoon sesame seeds
- Half a medium carrot
- 1/4 cup Sriracha mayo
- 1 cup water
Method
- Rinse sushi rice. Combine rice and water in a rice maker. Cook and then set aside to cool.
- As rice is cooking and cooling, prepare mango and avocado by cutting them into long bite sized pieces.
- Prepare cucumber and carrot by cutting them into long thin strips.
- Cut nori sheets into 4 equal pieces.
- When rice is cooled sufficiently, add a spoonful to each piece of nori. Top with cucumber, carrot, mango, and avocado. Drizzle with sriracha mayo and top with sesame seeds.
