Ingredients
- 1 small onion
- 1 tbsp olive oil
- 6 chicken thighs
- 1 jar Valcom Massaman curry paste
- 2 cloves of garlic
- 1 can of coconut milk
- 1 tsp sugar
- 1 tsp fish sauce
- 10 cherry tomatoes
- 2 cups of cubed potato
- 2 tsp Tamarind paste
- Jasmine rice
Method
- Chop onion into small cubes and fry in a pan with garlic and olive oil.
- Add cubed chicken to the pan and fry lightly until slightly golden.
- To make the sauce add Valcom Massaman curry paste, Tamarind, cubed potatoes, sugar, fish sauce, coconut milk and cherry tomatoes to pan and place in the oven at 220 degrees celcius for 20 minutes.
- Serve with jasmine rice and top with Corriander.
