Ingredients
- Massaman curry paste 1 small jar
- 400g beef chuck whole
- 1 Onion sliced
- 3 carrots sliced
- Bok Choy
- Green beans
- Frozen peas
- Coconut milk 400g
- Fish sauce 2 teaspoons
- White rice
- Flat bread
- Coconut yogurt
Method
- In pressure cooker, brown beef in oil, remove from pot
- In pressure cooker, combine curry paste with fish sauce and fry till fragrant
- Add beef back into pot then add all vegetables and fry a little
- Add 400g coconut milk
- Set pressure cooker for 20 minutes
- Cook white rice for 20 minutes
- Toast some flatbread
- Add a dollop of coconut yogurt
