Ingredients
- Lamb shanks x 4
- Garlic
- Oil
- Massaman paste
- Coconut milk
- Chicken stock
- Rice
- Diced onion
Method
- Sear lamb shanks in oil and garlic in pressure cooker.
- Once seared remove. Add onions and saute, once translucent, add massaman paste until fragrant, add lamb shanks and coat in paste.
- Add in coconut milk and stock. Close pressure cooker and cook for 50mins and quick release valve.
- Remove lamb shanks from liquid and Set aside. Set cooker to simmer, and let sauce thicken. Add lamb shanks back to sauce and serve on rice with coriander.
- It tasted amazing (I know it doesn't look that amazing) but it was delicious and my kids ate 3 serves!
