Ingredients
- Miso whites 2tbps
- Kewpie mayonnaise 2tbps
- 1tsp white sugar
- 2Tbsp sesame oil
- 1tsp Lime juice
- 2Tbsp soy sauce
- 2Tbsp miren
- Soba noodles 1 packet
- 1/2 Bbq chicken shredded
- 1.5 cups thinly shredded cabbage
- 1 cup julianed carrot
- 1/2 cup edamame
- 1/2 cup cucumber thinly sliced
- 5 x baby radishes thinly sliced
- 1/2 cup unsalted cashews
- 2Tbsp fried shallots
Method
- To make the dressing mix all wet ingredients together in a jar. Add in sugar too and shake until combined.
- Next boil water large saucepan. Once boiling add soba noodles and cook as per instructions on the packet. Approx 4 mins
- Cut, slice, chop all ingredients and mix together in a large bowl.
- Shred bbq chicken. Add to vegetables I. Big bowl.
- Drain the soba noodles and add to salad/chicken mix and toss together.
- Drizzle over salad dressing.
- For crunch Add cashews and fried shallots to garnish
