Ingredients
- 3tbsps white Miso paste
- 2 medium carrots
- 2 packets OBAP sweet potato noodles
- 3 tbsps whole cashew nuts
- 1 whole brown onion
- 1 tbsp crushed ginger
- 1 tbsp crushed garlic
- 300g tofu
- 1 tbsp honey
- 1 tbsp soy sauce
- 150g broccoli
- 200g cauliflower
- Crispy fried shallots, to serve
Method
- Chop tofu and fry in air fryer
- Boil water and add OBAP sweet potato noodles
- Sauté onion, garlic and ginger in a splash of water, add carrots and then brocolli and cauliflower
- Add miso paste, honey and soy sauce
- Once cooked, add tofu
- Once cooked, drain noodles and add to veges and tofu
- Serve, with fried shallots for garnish
