- Lightly roast the uncooked rice until golden brown, then use a mortar and pestle to ground the rice. Finely dice the red onion and shallots. Coarsely chop the coriander and mint.Wash and fry the mushrooms in oil.Once slightly cooled, mix in onion, shallots, coriander, mint, fish sauce, lime juice, sugar and chilli if desired. Sprinkle ground rice on for texture!
