- Brown rice, red curry paste, coconut milk, tofu, zucchini, potato, green beans, broccoli, bok choy, onion, garlic, stock, coriander, lime juice
- Cook rice til tender.Cook onion and garlic in red curry paste until fragrant. Add tofu for a few minutes. Add stock and veges, excl bok choy, coriander and lime. Simmer til potato is cooked and other veges are tender, and rice is cooked. Serve curry on top of rice and garnish with lime juice and coriander.
