- Red onion , Tomato, Rocket, Cucumber, Bean sprouts, Carrot, Coriander,Corn, Lettuce, Red Cabbage, Almonds or Sesame seeds, coriander or Chilli flakes, salt, pepper, lemon or lime juice drizzle, Soba noodles and Kewpie sesame soy dressing.
- My Soba Noodle salad= Japanese inspired=(Wash and chop up any salad you like, how ever you like and put aside) Me=1.I wash then roughly chop up 1 tomato,1/3 red onion, 1/2 a Lebanese cucumber and Almonds 1/2 cup. I then chiffonade some lettuce and purple cabbage. I peel some carrot ribbons then I toss the lot with some bean sprouts, Rocket and whatever herb I have in my garden at the time :) today was Coriander , salt and pepper:) , sometimes I put Chilli and corn kennels in if mum is not home :):). shhhhh:)2.While the salad marries with each other I boil my Organic Soba Noodles for 3 min on high.3. drain and chill with cold water. (should be soft/delicate)4..Add noodles to salad and toss gently with a Generous amount of Kewpie Sesame soy dressing.5. I chill in fridge for about 1/2 an hour before I eat it as the dressing and salad taste so delicious together really cold :) its simple but so delicious.6..I usually garnish with sesame seeds as is traditional ,but cause I didn’t have any and used Almonds this time I just put some Almonds and Coriander with a drizzle of lime juice( from my garden)on to finish :)I love this so much without a protein just Vegan however it can certainly turn into a great salad with warm beef strips , chicken , pork , fish, Tofu, halloumi cheese is wicked in it too :) etc.So easy , goes a long way and very filling but heathy and light, so versatile can be a little side, a main, entree ,in a wrap, hot , cold, any time of the day, any season and a crowd pleaser at BBQS :) I hope you like it, obviously I adore the combination so so much, could live on it lol.:) all my friends buy the dressing and noodles too now :):)Thankyou
