
Ingredients
- 3 cups of cold cooked jasmine rice
- 4 Chinese Sausage or Chinese Style Lup Chong
- 2 eggs, beaten
- a handful of snow peas, sliced
- spring onion, sliced thinly
- Seasonings:
- 2 cloves of garlic, minced
- 2-3 tablespoons of ABC sweet soy sauce
- 1 tablespoon of fish sauce
- Salt and pepper (to taste)
- Oil (as needed)
- 1-2 tablespoon ABC Extra Hot Chilli Sauce (optional if you want to make it spicy)
Method
- Heat the oil and scramble the eggs: In a large pan or wok, heat a small amount of oil over medium heat. Pour in the beaten eggs and scramble them until they are fully cooked. Remove the scrambled eggs from the pan and set them aside.
- In the same pan, add a bit more oil if needed. Add the sliced Lup Chong (Chinese sausage). Stir-fry them for about 3 minutes, or until they are slightly browned and cooked through.
- Add the minced garlic. Stir-fry for another 1-2 minutes, or until the garlic is fragrant.
- Add the cold rice to the pan, breaking up any clumps with a spatula. Pour in the ABC sweet soy sauce, fish sauce. Add salt, and pepper to taste. Stir everything together until the rice is evenly coated with the seasonings and heated through.Add the ABC Extra Hot Chilli Sauce if you want to make it spicy fried rice.
- At the end, add the sliced snow peas and spring onions. Toss them together with the fried rice until everything is well combined. Serve immediately.Perfect for a warm, comforting meal!
