Ingredients
- 1kg pork belly
- olive oil
- salt
- 1 brown onion, chopped
- 2 garlic cloves
- Half a green chili
- 2 tbsp ABC Kecap Manis
- 5 eggs
- Bunch of broccolini
- Crispy shallots to serve
Method
- Season pork belly with salt and olive oil. Roast in oven for 40 minutes at 220c, then turn down temperature to 150c and cook for another 40 minutes.
- Meanwhile, in a frypan, saute onion, chili and garlic with olive oil for 2 minutes until fragrant. Then add cooked rice and ABC Kecap Manis, stir and cook for a further 5 minutes.
- In another pan, fry 5 eggs.
- In a steamer, steam broccolini for 5 minutes.
- Once cooled, chop roasted pork belly into bite size pieces and serve with rice, egg, broccolini and crispy shallots. This dish serves 5. Enjoy!
