
Ingredients
- 1 Packet of OBENTO Ramen Noodles
- 2 Table Spoons of Vegetable Oil
- 1 Spanish Red Onion 2cm Diced
- 2 Cloves of Crushed Garlic
- 2cm's of Grated Ginger
- 4 Mushrooms Sliced
- 1 Medium Carrot Cut in Battons
- 1/2 Yellow Capsicum 2cm Diced
- 1/2 Red Capsicum 2cm Diced
- 100gms Snowpeas 2cm Diced
- 100gms Green Round Beans Cut in 3cm Battons
- 1 Bok Choy Sliced
- 50gms Baby Spinach
- 1pkt Baby Corn
- Salt and Pepper
Method
- In a Wok add oil heat for 1-2 minutes.
- Stir fry Spanish Onions, Garlic, Ginger and Mushrooms for about 8 minutes or until tender.
- Then stir through Carrots, Capsicums, Snow Peas, Green Beans, Bok Choy for a further 5 minutes.
- Add Baby Spinach and Baby Corn stiring gently until Spinach has wilted within 2 minutes.
- Lastly add Salt & Pepper to taste.
- In a colander rinse the Obento Ramen Noodles under cold water and drain.
- Finally stir Obento Ramen Noodles through the vegetables and serve with the natural juices of the vegetables.
